I don't know about you, but because we're so busy during the summer our snacks need to be transportable and able to survive without refrigeration. And while health is an important factor to me (along with tasting yummy!), I came up with these delicious single serve cobblers that are easily baked and stored in mason jars.

6 - 8 ounce sized mason jars
1 cup unbleached flour
4 teaspoons dry sweetener, plus 3 teaspoons for sprinkling over berries
3 cups frozen mixed berries
3 tablespoons coconut oil
6 tablespoons water
Place the mason jars on a baking sheet and preheat the oven to 375 degrees.
In a small bowl, sift together the flour and 4 teaspoons of sweetener. Set aside.
Put 1/2 cup of frozen berries in each jar. Sprinkle 1/2 teaspoon of sweetener over top of the berries. Then spoon 2 tablespoons of the flour mixture overtop of the berries as well. Continue spooning a tablespoon at a time into each jar until the flour mixture is used up. Put the lid on the jars and shake to distribute the flour mixture.
Pour 2 teaspoons of melted coconut oil over the top of the contents of each jar, then add 1 tablespoon of water.
Place the baking sheet in the oven and bake for 35 minutes.
Once baked, allow the jars to cool before screwing on the lids and placing in the refrigerator.
